2018 Convocation Recipe's

We thank you for coming and enjoying our fellowship during the 2018 Mission District Convocation.

Please find the recipes for some of the breads from the breakfast. 

These receipes were provided by the Ladies of Emmanuel Lutheran Church - Export, PA!

Zucchini bread

2 cups grated zucchini
3 Eggs.
2 cup sugar
1 cup oil
3 cups flour
1 teaspoon baking soda
1/4 teaspoon baking powder
3 teaspoons cinnamon
3 teaspoons vanilla
1 cup walnuts or raisins
1 teaspoon salt
Beat eggs till foamy. Pour in sugar, oil, and zucchini.  Add other dry ingredients and mix.  Pour into greased and floured loaf pans.  Bake at 350 for 1 hour.  Makes 2 large loaves.

Apple Loaves

3 eggs
1 cup oil
2 cups sugar
3 cups flour
1 Tsp Baking soda
1 tsp salt
1 tsp vanilla
1 tsp cinnamon
3 cups (thin sliced) apples (tart apples)
Mix oil and sugar first the add eggs.  Add rest of ingredients except apples and mix.  Fold in apple slices.  Put into 2 large greased loaf pans.  Bake 325 degrees for 1 hour.  Check may need another 5 or 10 minutes

Optional – can add 1 cup chopped nuts

Cranberry-Orange Bread

2 cups flour
1 cup sugar
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
2 TBSP shortening (oil)
grated rind and juice of 1 large orange plus water to make ¾ cup
1 egg, beaten
1 cup raw cranberries, cut in halves
Blend dry ingredients. Mix in shortening, orange rind, juice and egg. Fold in cranberries.  Pour into 2 large greased loaf pans.  Bake at 350 degrees for 55 minutes to 1 hour.  

Poppyseed Loaves

3 cups flour
2 ¼ cups sugar
1 cup + 2 TBSP oil
3 eggs (about 1 cup)
1 ½ cups milk
1 ½ tsp baking powder
1 ½ tsp salt
1 ½ TBSP poppy seeds
1 ½ tsp vanilla
1 ½ tsp almond extract
1 ½ tsp butter flavoring
Mix together and beat 2 minutes.  Put in 2 large loaf pans.  Bake at 350 degrees for about 1 hour.  Check near center with aluminum potato nail for doneness .
Make Glaze
¾ cups granulated sugar
¼ cup orange juice
½ tsp vanilla
½ tsp almond extract
½ tsp butter flavoring
Poke holes in surface of loaves.  Glaze while loaves are still warm.  Freezes well.

Banana Bread
 
½ cup butter
1 ½ cups brown sugar
1 tsp vanilla
2 beaten eggs
2 cups flour – sifted
½ tsp salt
1 tsp baking soda
¼ cup buttermilk (or ¼ milk & 1 tsp vinegar)
1 cup mashed ripe bananas
½ cup walnuts (optional)
Cream butter and sugar.  Add vanilla and eggs. Stir in sifted flour, salt, soda alternately with buttermilk (sour milk).  Fold in mashed banana and nuts.  Grease and flour pan.  Bake at 350 degrees for 55 minutes.
You can double the recipe and make three 4x8 loaves. Bake 45-50 minutes.
